The Sushi Lexicon: Breaking Down Sushi Vocabulary

We know you love sushi, but how much do you really know about what you're ordering when you select one of the sushi rolls from GENKI Noodles and Sushi? Ordering sushi can sometimes be difficult because there are lots of terms on the menu that you might not recognize. So today, we're giving you a lesson in sushi vocabulary. Once you learn these terms, you'll be a sushi expert! 

Types of Sushi

Temaki sushi: This is better known as a hand roll and is likely what you are most familiar with ordering. A nori wrapper is rolled around various sushi fillings until it resembles a cone shape. 

Nigiri sushi: With Nigiri, you get bite-size mounds of seasoned rice topped with tuna, shrimp, eel or another topping.

Chirashi sushi: This literally means "scattered sushi." In these dishes, raw fish and vegetables are served over rice or noodles.

Sashimi: Order sashimi and you'll get thinly sliced raw fish served without rice.

Sushi Components

Nori: This is the seaweed your sushi is wrapped in. Primarily harvested off the coast of Japan, the seaweed is dried, roasted and then pressed into sheets. 

Yuba: For those who don't like nori, this alternative is made from soybeans. 

Sushi Meshi: This is just a fancy name for your sushi rice that you might hear at the sushi bar. 

Awase-zu: Ever wonder what makes sushi rice different from regular short-grain rice? It's this seasoning, which is made from rice wine vinegar, salt and sugar.

Amaebi: Raw shrimp

Hirame: Flounder

Ika: Squid 

Kani: Crab 

Maguro: Tuna 

Mekajiki: Swordfish 

Sake: Salmon

Unagi: Eel 

Putting it All Together 

Now that you've got your sushi vocab down, it's time to bring it all together into one delicious sushi roll! Electric Eel: Eel, jalapeño and cucumber topped with salmon and tuna

Our I <3 Sushi roll is one of our favorites. It's made with shrimp tempura and cream cheese, then topped with tuna, avocado, our sweet and spicy chili sauce and wasabi cream.

I <3 Sushi: Shrimp tempura and cream cheese, topped with tuna, avocado, sweet and spicy chili sauce, and wasabi cream. 

Rainbow: Imitation crab and avocado, topped with tuna, salmon, and yellowtail. 

Himalayan: Tempura fried shrimp and asparagus with avocado, topped with snow crab salad, sweet soy sauce, and sriracha chili sauce. 

Dynamite: Chopped tuna, salmon, and yellowtail, with cucumber, tomato, and scallions, topped with a sweet and spicy chili sauce. 

Smoking Dragon: Shredded crab salad with lemon zest topped with smoked salmon, avocado and spicy mayo. 

We also make all of your favorite traditional rolls, such as cucumber, avocado, California and spicy tuna rolls. But if you're still not sure what to order, you can always order "omakase." In Japanese, omakase means "to trust," which means you're trusting the sushi chef to make the choice for you. If you’ve never experienced this type of service, it can be quite an adventure and you may find a new sushi favorite!
